-- Rupert-Leroy, Chardonnay Brut Nature (Champagne, FR) -- $130 -- ($169 night of)

About the Vintner:

Emmanuel Leroy and Bénédicte Ruppert are guiding a second generation, field of dreams estate in the southern Champagne village of Essoyes, seven kilometers from the Burgundian border. I cannot overemphasize the detail-oriented commitment of these young growers to releasing pristine wines.  A commitment that reaches the altruistic heights of setting aside the juice from the first three rows of their vineyards that border conventionally farmed vines.

About the Wine:

The delicious fruits of Ruppert-Leroys efforts are on full display in the Martin Fontaine, an unctuous single vineyard Blanc de blancs with zero dosage. Vinified in ex-Chassagne Montrachet casks this pale, straw yellow cuvée has strikingly expressive aromatics, starting with peppermint, candied lemon, and ginger, before moving to cayenne pepper, honeycomb, and hazelnut. The palate is finely balanced and inviting with Golden Delicious, warm caramel, lemon curd, and white tea with a coda of quince.

-- Phillipe & Nicolas Natural Spontane Rose (Azay-le-Rideau, FR) -- $65 -- ($85 night of)

About the Vintner:

In 2013, longtime friends Nicolas Grosbois and Philippe Mesnier purchased 12 hectares of vines in Azay-le-Rideau, an excellent, though relatively unknown terroir a few kilometers east of Chinon. They immediately began farming all the vines organically, and set about on an ambitious project to reintroduce the wines of Azay-le-Rideau. Traditionally, Azay le Rideau is famous for white wines made from Chenin Blanc, and rosé wines made from Grolleau and Gamay.

Most of the vineyards are located in Azay-le-Rideau on the lieu-dit  "Hauts Baigneux". The domaine also owns a two hectare plot in Saché, close to the former studio of Alexander Calder, the famous American artist. This great flint-heavy terroir produces the two top cuvées of the domaine: Le Clos des Brancs and Blanc Chenin.

The wines of Domaine des Hauts Baigneux are all produced with natural yeast, and bottled with minimal intervention. The cuvées Les Chenes and Les Pentes are delicious vins de soif that showcase the best of Loire Valley. The sparkling wines are fantastic bottles of everyday bubbles, and the single vineyard Chenin Blancs are a testament to the towering quality of this terroir.

About the Wine:

Following the frost in Spring of 2017 that greatly reduced the harvest at the domaine, Philippe and Nicolas decided to travel the regions of the Rhone and Southwest to discover beautiful parcels of organic grapes which they could use to make white and rosé natural sparkling wines. These unique blends create a harmonious wine with fine bubbles; elegant in lightness and fruit.

-- Bonnet-Ponson,  Extra Brut "Perpétuelle"  (Champagne, FR) -- $100 -- ($130 night of)

About the Vintner:

Since Gregoire Bonnet in 1862, six generations of the family have built the house of Champagne Bonnet-Ponson. Thierry Bonnet and his son, Cyril, are now the guardians of tradition and maintain the original style of winemaking by sourcing fruit from only their family-held vineyards. The legacy is spread over 26 acres and five Premier Cru and Grand Cru villages: Chamery, Vrigny, Coulommes la Montagne, Verzenay and Verzy. With a desire to preserve the terroir and the continuing search to improve their wines, Bonnet-Ponson now manages their vineyards using organic practices.

About the Wine:

Extra Brut combines a base of Chardonnay with Pinot Noir and Meunier, with a majority from a recent vintage, and the remainder from a perpetual blend of multiple years, which is drawn-off and refilled with each new harvest. Light barrel ferment and long lees aging combine to bring a delicately complex wine, accessible and perfect for any moment. A fresh, aperitif-style Champagne, featuring chalk and pastry notes layered with flavors of poached pear, lemon zest, smoked almond and fleur de sel, all riding the airy mousse.
